Too Busy to Cook?
One of the hardest things about being a parent is coming
up with healthy food that everyone will eat - that is easy to prepare. In
our family, no one seems to like leftovcers, and it is a lot of work to
think up new things to make. In my book, Survival tips for Working Moms,
I included a few recipes. I'm sure we could all use more ideas, so I'll
start by sharing my Very Quick Lasagna recipe, and I hope you will share
recipes that work for your family. Don't send in recipes straight out of
a cookbook - they are copyrighted. If you want to recommend a cookbook,

Very Quick Lasagna
1 small container ricotta cheese, 15 oz.
2 eggs
1 tsp. allspice
3/4 tsp. salt
1/4 tsp. pepper
1 box frozen chopped spinach, thawed
1 large jar spagetti sauce, 26 oz.
1 box lasagna noodles, 12 oz., uncooked
1 lb. mozzarella cheese, sliced or grated
1/4 cup Parmesan cheese, grated
Beat ricotta, eggs, allspice, salt, and pepper with electric
mixer until smooth. Stir in spinach. Spread a little sauce on the bottom
of a 9 x 13 baking dish.Arrange a layer of dry noodles. Spread about 1/3
of ricotta mixture. Cover with mozzarella. spread a layer of sauce. Add
two more layers in same way, ending with sauce. Sprinkle with Parmesan.
Bake 350° 30 minutes covered, then 15 minutes uncovered.
